Roasted Sweet Potatoes and Carrots

5 medium sweet potatoes, scrubbed and chopped

Bag of carrots, peeled and sliced

¼ cup avocado oil or olive oil

¼ cup local honey

½ tsp. or more of sea salt

1 tsp. cinnamon

½ cup toasted walnuts

½ cup golden raisins

Heat oven to 400. Put chopped potatoes and carrots in a bowl. Add oil and all seasonings. Mix well with your hands (wear gloves) or mix well with two salad forks. Roast in oven on a sheet pan until desired results are reached; we like them in there for about 25-30 minutes. The honey will caramelize if you do.
